3 medium zucchinis, sliced into thin rounds

3 medium tomatoes, sliced into thin rounds

1 large onion, thinly sliced

2 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon fresh thyme (or ½ teaspoon dried)

1 teaspoon fresh basil (or ½ teaspoon dried)

Salt and pepper to taste

1 cup fresh breadcrumbs (preferably whole grain)

1/2 cup grated Parmesan cheese (optional for a non-vegan option)

Fresh parsley for garnish

Instructions
 

Preheat the oven to 375°F (190°C).

    In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the onion until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute. Season with salt and pepper, then set aside.

      In a greased 9x13-inch baking dish, layer the sautéed onion and garlic mixture evenly across the bottom.

        Arrange the sliced zucchinis and tomatoes in an alternating, overlapping pattern over the onion mixture. Season each layer with a sprinkle of salt, pepper, and fresh thyme and basil.

          In a small bowl, combine the breadcrumbs, remaining olive oil, and Parmesan cheese (if using). Mix until the breadcrumbs are evenly coated.

            Sprinkle the breadcrumb mixture over the layered vegetables.

              Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes, or until the vegetables are tender and the top is golden brown.

                Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
