Ingredients

1 pound ground chicken

1 cup fresh spinach, chopped

1 cup white cheddar cheese, shredded

1/4 cup breadcrumbs

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon olive oil

4 hamburger buns

Lettuce leaves, for serving

Sliced tomatoes, for serving

Instructions

In a large mixing bowl, combine the ground chicken, chopped spinach, white cheddar cheese, breadcrumbs, mayonnaise, Dijon mustard, garlic powder, onion powder, salt, and black pepper. Mix until everything is well incorporated.

Divide the mixture into four equal portions and shape them into burger patties.

Heat olive oil in a skillet over medium heat. Once hot, add the chicken burgers to the skillet. Cook for about 5-6 minutes on each side or until the internal temperature reaches 165°F (75°C) and the burgers are golden brown.

During the last minute of cooking, place a slice of white cheddar cheese on each patty and cover with a lid to let the cheese melt.

Remove the burgers from the skillet and let them rest for a minute.

Toast the hamburger buns in the skillet or a toaster until golden brown.

Assemble the burgers by placing a lettuce leaf and a slice of tomato on the bottom half of the bun, then add the cheesy chicken burger on top. Cover with the top half of the bun.

Serve immediately with your favorite sides, like sweet potato fries or a fresh salad.
