Ingredients
  

For the Dough:

2 cups all-purpose flour

1/4 cup coconut sugar

1/2 teaspoon salt

1/4 cup vegan butter, cold and cubed

1/2 cup almond milk (or any plant-based milk)

1 tablespoon apple cider vinegar

1 teaspoon vanilla extract

For the Strawberry Filling:

1 cup fresh strawberries, hulled and chopped

2 tablespoons coconut sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

For the Vegan Cream Cheese Filling:

1 cup vegan cream cheese

1/4 cup powdered sugar

1 teaspoon vanilla extract

2-3 tablespoons almond milk (to adjust consistency)

Instructions
 

Prepare the Dough:

    - In a mixing bowl, combine the all-purpose flour, coconut sugar, and salt. Mix well.

      - Add the cold vegan butter into the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

        - In a separate small bowl, mix the almond milk, apple cider vinegar, and vanilla extract. Allow it to sit for 5 minutes to curdle slightly.

          - Gradually add the wet ingredients into the dry mixture, stirring until it forms a soft dough. Be careful not to overmix.

            - Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

              Prepare the Strawberry Filling:

                - In a small saucepan over medium heat, combine the chopped strawberries, coconut sugar, lemon juice, and cornstarch.

                  - Cook while stirring gently until the mixture thickens and the strawberries break down (about 5-7 minutes). Remove from heat and let it cool.

                    Prepare the Vegan Cream Cheese Filling:

                      - In a mixing bowl, combine the vegan cream cheese, powdered sugar, and vanilla extract. Beat until smooth. Add almond milk, one tablespoon at a time, until desired consistency is reached.

                        Assemble the Danishes:

                          - Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

                            - On a lightly floured surface, roll out the chilled dough into a rectangle about 1/4 inch thick. Cut the dough into squares (about 4x4 inches).

                              - Place a tablespoon of the vegan cream cheese filling in the center of each square, followed by the cooled strawberry filling.

                                - Fold the corners of the dough squares towards the center, pinching them together to form a pocket. You may want to brush the seams lightly with water to help seal them.

                                  - Place the filled danishes on the prepared baking sheet.

                                    Bake:

                                      - Bake in the preheated oven for 20-25 minutes or until they are golden brown and puffed.

                                        - Allow the danishes to cool for a few minutes before serving.
