Ingredients
  

1 cup all-purpose flour

1 tablespoon sugar (brown or white)

2 tablespoons baking powder

1/8 teaspoon salt

1 cup almond milk (or any plant-based milk)

2 tablespoons vegetable oil (coconut oil works well too)

1 teaspoon vanilla extract

Optional: 1/2 teaspoon cinnamon for added flavor

Toppings: Maple syrup, fresh fruits, nuts, or vegan chocolate chips

Instructions
 

In a large mixing bowl, combine the all-purpose flour, sugar, baking powder, salt, and optional cinnamon. Whisk until well-blended.

    In another bowl, mix the almond milk, vegetable oil, and vanilla extract until combined.

      Pour the wet ingredients into the dry ingredients, and stir gently until just combined. Be careful not to over-mix; a few lumps are okay.

        Preheat a non-stick skillet or griddle over medium heat. You can lightly grease it with a bit of oil if necessary.

          Once the skillet is hot, pour about 1/4 cup of the pancake batter onto the skillet for each pancake.

            Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes on the other side until golden brown.

              Repeat with the remaining batter, keeping cooked pancakes warm in the oven if desired.

                Serve warm with your favorite toppings like maple syrup, fresh fruits, nuts, or a sprinkle of vegan chocolate chips.
