Vanilla Crepes

1 cup all-purpose flour

2 large eggs

1 ½ cups milk (whole or 2%)

2 tablespoons granulated sugar

1 teaspoon vanilla extract

2 tablespoons melted butter (plus extra for cooking)

Pinch of salt

Optional toppings: fresh fruit, whipped cream, maple syrup, or Nutella

Instructions
 

In a large mixing bowl, whisk together the flour, eggs, milk, sugar, vanilla extract, melted butter, and salt until smooth. Make sure there are no lumps in the batter. Let the batter rest for about 30 minutes at room temperature.

    Heat a non-stick skillet or crepe pan over medium heat and add a small amount of butter (about 1 teaspoon), swirling to coat the surface evenly.

      Pour about ¼ cup of the batter into the center of the skillet. Quickly swirl the pan to spread the batter evenly into a thin layer. Cook for about 1-2 minutes, or until the edges start to lift and the bottom is lightly golden.

        Carefully flip the crepe using a spatula and cook for an additional 1 minute on the other side. Remove the crepe and place it on a plate. Continue this process with the remaining batter, adding more butter to the pan as needed.

          Serve the crepes warm, filled with your choice of toppings. Popular options include fresh berries, bananas, a drizzle of maple syrup, whipped cream, or a spread of Nutella. Fold or roll the crepes and enjoy!
