1 lb ground beef

1 lb ground pork

1 cup mashed potatoes (prepared and cooled)

1 cup shredded sharp cheddar cheese

1/2 cup cooked bacon, chopped

1/2 cup diced green onions

1/2 cup breadcrumbs

1 large egg

2 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Optional: Extra cheese for topping

Preheat Oven: Preheat your oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper for easy removal.

    Combine Meats: In a large mixing bowl, combine the ground beef and ground pork. Mix them well.

      Add Ingredients: To the meat mixture, add the cooled mashed potatoes, half of the cheddar cheese, cooked bacon, and diced green onions. Fold in breadcrumbs, egg, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, and season with salt and pepper. Mix until everything is well combined.

        Shape the Loaf: Transfer the meat mixture to the prepared loaf pan. Shape it into a loaf, smoothing the top with a spatula or spoon.

          Top with Cheese: If desired, sprinkle the remaining cheddar cheese evenly on top of the meatloaf.

            Bake: Place the loaf in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 160°F (70°C) and the outside is golden brown.

              Rest: Once cooked, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. This allows the juices to settle and makes for cleaner slices.
