4 large russet potatoes

1/2 cup sour cream

1/2 cup shredded sharp cheddar cheese

1/4 cup milk (or cream for extra richness)

4 tablespoons unsalted butter, softened

1/4 cup green onions, finely chopped

1/2 teaspoon garlic powder

Salt and pepper to taste

1/2 cup cooked crispy bacon bits (optional)

Extra cheese for topping

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash and scrub the russet potatoes thoroughly. Prick them with a fork several times and place them directly on the oven rack. Bake for about 45-60 minutes until they are tender and fully cooked, fluffing easily when squeezed.

      Once baked, remove the potatoes from the oven and let them cool for about 10 minutes until you can handle them. Cut each potato in half lengthwise.

        Scoop out the insides of the potatoes carefully, leaving a 1/4-inch border to maintain the shape. Place the scooped potato flesh into a mixing bowl.

          To the bowl with potato flesh, add sour cream, shredded cheddar cheese, milk, softened butter, green onions, garlic powder, salt, and pepper. Mix everything together until smooth and creamy. If desired, fold in cooked bacon bits for added flavor.

            Spoon the potato mixture back into the potato skins, piling it high. Sprinkle some additional shredded cheese on top for a cheesy crust.

              Place the filled potatoes back onto a baking sheet. Bake in the preheated oven for an additional 15-20 minutes, or until the tops are golden and bubbly.

                Remove from the oven and garnish with fresh parsley if desired. Serve hot and enjoy the delightful creamy goodness!
