Tuscan Chicken Pasta Recipe

Ingredients
  

2 boneless, skinless chicken breasts

8 oz penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach, fresh

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions. Drain and set aside.

    Cook the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side or until fully cooked through. Transfer to a plate and let it rest before slicing.

      Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Then add the cherry tomatoes and cook for about 3-4 minutes until they start to burst.

        Add the Spinach: Stir in the fresh spinach and cook until wilted, about 1-2 minutes.

          Create the Cream Sauce: Lower the heat and pour in the heavy cream. Stir to combine, then add the grated Parmesan cheese, stirring until melted and smooth.

            Combine: Slice the cooked chicken, add it back to the skillet, and mix in the cooked penne pasta. Toss everything together until the pasta is well coated with the creamy sauce.
