Turkey Breakfast Patties with Avocado and Egg

1 pound ground turkey

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon fresh parsley, chopped

1 ripe avocado, sliced

4 large eggs

Olive oil for frying

Prepare the Turkey Mixture: In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, smoked paprika, salt, pepper, and chopped parsley. Mix until all ingredients are well combined.

    Shape Patties: Divide the turkey mixture into 8 equal portions and shape them into patties, about 1/2 inch thick.

      Cook the Patties: Heat a large skillet over medium heat and add a drizzle of olive oil. Once hot, add the turkey patties, cooking for about 5-6 minutes on each side until they are golden brown and cooked through (internal temperature should reach 165°F).

        Fry the Eggs: In the same skillet, add a bit more olive oil if needed and crack the eggs in, frying them sunny-side up or to your desired doneness. Season with salt and pepper.

          Assemble the Breakfast: On each plate, place two turkey patties. Top each patty with sliced avocado and a fried egg.

            Serve and Enjoy: Garnish with additional parsley if desired and serve immediately. Pair with toast or fresh fruit for a complete breakfast!
