Tunisian Kaber

Ingredients
  

2 cups semolina flour

1 cup warm water

2 tablespoons olive oil

1 teaspoon salt

1 teaspoon sugar

2 teaspoons instant yeast

1 tablespoon harissa (Tunisian chili paste)

1/2 cup chopped fresh parsley

1/2 cup feta cheese, crumbled

1/4 cup black olives, pitted and sliced

1 teaspoon ground cumin

1 teaspoon ground coriander

Sesame seeds for topping

Prepare the Dough: In a large bowl, combine the semolina flour, salt, sugar, instant yeast, ground cumin, and ground coriander. Mix well.

    Add Moisture: Create a well in the center, add warm water and olive oil, then mix until a dough forms. If it feels too dry, add a little more water, one tablespoon at a time.

      Knead the Dough: Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth. It should be elastic and slightly sticky.

        First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm environment for about 1 hour or until doubled in size.

          Prepare the Filling: In a separate bowl, combine the harissa, chopped parsley, feta cheese, and black olives. Mix until evenly incorporated.

            Shape the Kaber: Once the dough has risen, punch it down and divide it into equal pieces (about the size of a golf ball). Roll each piece into a flat circle, then place a tablespoon of the filling in the center. Fold the edges over and pinch to seal, forming a ball again.

              Second Rise: Place the formed Kaber on a baking sheet lined with parchment paper. Cover and let rest for another 30 minutes.

                Preheat the Oven: While the Kaber are resting, preheat your oven to 375°F (190°C).

                  Bake: Before baking, brush the tops with a little olive oil and sprinkle with sesame seeds. Bake in the preheated oven for 20-25 minutes or until golden brown.

                    Serve: Let them cool slightly before serving. Enjoy your Spicy Tunisian Kaber warm or at room temperature as a delightful snack or appetizer!
