2 cups semolina flour

1 ½ cups warm water

1 tsp salt

1 tbsp olive oil (plus extra for brushing)

1 tsp sugar

1 tsp dry yeast

1 tsp cumin powder

½ tsp ground coriander

½ cup feta cheese, crumbled

1 cup chopped fresh herbs (parsley, cilantro, and mint)

Black sesame seeds (for garnish)

Instructions
 

Prepare the Dough: In a mixing bowl, combine semolina flour and salt. In a separate bowl, dissolve the sugar and dry yeast in warm water, allowing it to foam for about 5 minutes.

    Combine Ingredients: Gradually add the yeast mixture to the semolina flour. Mix well to form a dough. Add olive oil and knead the dough for about 10 minutes until smooth and elastic.

      Flavor the Dough: Incorporate cumin and ground coriander into the dough, kneading again to distribute the spices evenly.

        First Rise: Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for about 1 hour or until doubled in size.

          Shape the Debla: Once the dough has risen, punch it down and divide it into 6-8 equal portions. Roll each portion into a ball, then flatten them into circles about ½ inch thick.

            Add Filling: In a bowl, mix feta cheese with the chopped fresh herbs. Place a spoonful of the filling in the center of each flattened dough portion. Fold the edges over the filling and pinch to seal, creating a small stuffed flatbread.

              Second Rise: Allow the stuffed breads to rest for another 30 minutes. Preheat your grill or a skillet over medium heat.

                Cook the Debla: Brush each side of the stuffed dough with olive oil and place them on the preheated grill or skillet. Cook for about 4-5 minutes on each side, until golden brown and cooked through.

                  Finishing Touch: Once cooked, sprinkle black sesame seeds on top while still warm. Serve the Debla warm as a snack or appetizer.
