Ingredients

4 boneless, skinless chicken breasts

1 cup fresh pineapple chunks

1/2 cup low-sodium soy sauce

1/4 cup honey

1 tablespoon rice vinegar

2 tablespoons vegetable oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon red pepper flakes (optional, for a bit of heat)

Salt and pepper to taste

1 tablespoon chopped fresh cilantro (for garnish)

Sliced green onions (for garnish)

Instructions

Prepare the Marinade: In a bowl, combine soy sauce, honey, rice vinegar, vegetable oil, minced garlic, grated ginger, and red pepper flakes. Mix well until the honey is dissolved.

Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, preferably 1-2 hours for enhanced flavor.

Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If using an oven, preheat it to 375°F (190°C).

Cook the Chicken: Remove the chicken from the marinade, reserving the marinade for later. Grill the chicken for about 6-8 minutes per side or until it has nice grill marks and is cooked through (internal temperature should reach 165°F / 74°C). If baking, place the chicken in a greased baking dish and bake for about 25-30 minutes, or until fully cooked.

Make the Pineapple Glaze: While the chicken is cooking, pour the reserved marinade into a small saucepan. Add the fresh pineapple chunks and bring to a boil. Reduce the heat and simmer for about 5-7 minutes, allowing the mixture to thicken slightly and the pineapple to soften.

Glaze the Chicken: In the last few minutes of cooking chicken, brush the thickened pineapple glaze over the chicken pieces, allowing it to caramelize slightly.

Serve: Once cooked, remove the chicken from the grill/oven and let it rest for 5 minutes. Serve the chicken drizzled with additional pineapple glaze and topped with freshly chopped cilantro and sliced green onions.
