1/2 cup unsalted butter (plus extra for greasing)

1 cup brown sugar

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp salt

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1/2 cup pineapple juice (reserve from the fresh pineapple)
