3 cups all-purpose flour

1 cup whole wheat flour

1 ½ tsp salt

2 tsp sugar

2 tsp active dry yeast

1 ½ cups warm water (about 110°F)

2 tbsp olive oil (optional)

Sesame seeds (for topping, optional)

Instructions
 

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, salt, and sugar. Mix well.

    In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5-10 minutes until foamy.

      Pour the yeast mixture into the flour mixture, along with olive oil if using. Mix with a wooden spoon until it starts to come together.

        Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.

          Place the kneaded dough in a lightly oiled bowl. Cover it with a clean kitchen towel and let it rise in a warm place for about 1-2 hours, or until doubled in size.

            Once risen, punch down the dough to release air. Divide it into two equal portions and shape each into a round disc (about 1-inch thick).

              Place the shaped dough onto a baking sheet lined with parchment paper. Cover and let it rest for another 30-45 minutes. Preheat the oven to 450°F (230°C).

                If desired, sprinkle sesame seeds on top of each disc and gently press them down.

                  Bake in the preheated oven for 15-20 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

                    Remove from the oven and let it cool on a wire rack before slicing. Enjoy with your favorite Moroccan dishes or dips!
