1 pound cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup black olives, sliced

1/4 cup red onion, finely chopped

1/2 cup fresh basil, chopped

1/4 cup feta cheese, crumbled

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes (optional)

1/4 cup olive oil

2 tablespoons balsamic vinegar

Salt and pepper to taste

Instructions
 

Begin by bringing a large pot of salted water to a boil. Cook the tortellini according to the package instructions until al dente, about 3-5 minutes. Drain and rinse under cold water to stop the cooking process.

    In a large mixing bowl, combine the cooked tortellini, halved cherry tomatoes, diced cucumber, red bell pepper, black olives, and red onion. Toss gently to mix the ingredients well.

      In a small bowl, whisk together the olive oil, balsamic vinegar, garlic powder, crushed red pepper flakes (if using), salt, and pepper. Adjust seasoning to taste, ensuring a nice balance of flavors.

        Pour the dressing over the tortellini mixture and toss to coat all ingredients evenly. Add in the fresh basil and crumbled feta cheese, gently mixing them in without crushing the tortellini.
