Ingredients
  

12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper, diced (any color)

1/2 cup red onion, thinly sliced

1/2 cup black olives, sliced

1/4 cup fresh basil leaves, chopped

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Grated Parmesan cheese for topping

Instructions
 

Cook the tortellini according to package instructions until al dente. Drain and rinse under cold water to cool.

    In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and basil.

      In a small bowl, whisk together olive oil, balsamic vinegar, garlic powder, salt, and pepper.

        Pour the dressing over the tortellini mixture and gently toss until everything is well coated.

          Taste and adjust seasoning if necessary.

            Allow the pasta salad to chill in the refrigerator for at least 30 minutes to let the flavors meld together.

              Just before serving, sprinkle with grated Parmesan cheese and garnish with additional basil if desired.
