Ingredients
  

2 cups heirloom tomatoes, sliced and drained

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1/2 cup fresh basil, chopped

3 tablespoons mayonnaise

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 pre-made pie crust (store-bought or homemade)

Optional: Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Prepare the pie crust in a 9-inch pie dish, pricking it with a fork. Bake for 10 minutes until lightly golden. Remove from oven and let cool slightly.

      In a mixing bowl, combine ricotta cheese, 1/2 cup of mozzarella cheese, Parmesan cheese, mayonnaise, Dijon mustard, garlic powder, onion powder, and half of the chopped basil. Mix well.

        Layer the drained tomato slices into the baked pie crust, sprinkling with salt and pepper as you go for seasoning.

          Spread the cheese mixture evenly over the tomato layer, smoothing it out with a spatula.

            Top with the remaining mozzarella cheese and a sprinkle of the remaining basil.

              Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbly.

                Remove from the oven and let the pie cool for about 10 minutes before slicing.

                  Garnish with fresh basil leaves before serving.
