2 cups whole milk

1 cup heavy cream

1/2 cup granulated sugar

1/4 cup sweetened condensed milk

1/4 cup unsweetened cocoa powder

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/4 cup toasted hazelnuts, roughly chopped

2 tablespoons unsweetened cocoa nibs (optional)

Sprinkling of sea salt for garnish

Toasting the Milk: In a heavy-bottomed saucepan over medium heat, combine the whole milk and heavy cream. Stir occasionally until the mixture begins to simmer. Lower the heat to medium-low and continue stirring until the milk develops a slightly nutty, toasted aroma, about 10-15 minutes. Be careful not to let it boil over.

    Sweetening the Milk: Once the milk is toasted, add the granulated sugar, sweetened condensed milk, vanilla extract, and salt. Stir until the sugar is completely dissolved.

      Preparing the Cocoa Mixture: In a separate bowl, mix the cocoa powder with a few tablespoons of the toasted milk mixture. Whisk until smooth to create a cocoa paste. Gradually add this cocoa paste back into the saucepan, whisking continuously to ensure a smooth suspension.

        Marble Effect: Remove the saucepan from heat and allow to cool slightly. Pour half of the toasted milk mixture into a chilled bowl. Gently fold in half of the chopped toasted hazelnuts and cocoa nibs (if using). Pour the remaining toasted milk mixture on top and lightly swirl with a spatula to create a marbled effect.
