Ingredients

1 cup strong brewed coffee (cooled)

3 large eggs (separated)

3/4 cup granulated sugar

8 oz mascarpone cheese

1 cup heavy cream

1 tsp vanilla extract

24 ladyfinger cookies

Cocoa powder (for dusting)

Dark chocolate shavings (optional, for garnish)

Instructions

Prepare the Coffee: Brew the coffee and allow it to cool completely. You can refrigerate it to speed up the cooling process.

Make the Egg Mixture: In a mixing bowl, whisk the egg yolks and granulated sugar together until pale and creamy (about 2-3 minutes).

Incorporate Mascarpone: Gently fold the mascarpone cheese into the egg yolk mixture until smooth and well combined.

Whip the Egg Whites: In a separate bowl, beat the egg whites until they form stiff peaks. Gently fold the egg whites into the mascarpone mixture, being careful not to deflate the mixture.

Whip the Cream: In another bowl, whip the heavy cream and vanilla extract until soft peaks form. Fold the whipped cream into the mascarpone mixture until smooth.

Assemble the Tiramisu: Dip each ladyfinger into the cooled coffee for about 1-2 seconds on each side, just until soaked but not soggy. Layer half of the soaked ladyfingers in the bottom of a rectangular dish.

Layer the Mixture: Spread half of the mascarpone mixture over the layer of ladyfingers. Repeat with another layer of soaked ladyfingers followed by the remaining mascarpone mixture.

Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight to allow the flavors to meld.

Serve: Before serving, dust the top generously with cocoa powder and garnish with dark chocolate shavings, if desired.
