1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter

1 teaspoon pure vanilla extract

1 tablespoon vanilla bean paste (optional for extra flavor)

Cooking spray or extra butter for the skillet

Instructions
 

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In a separate bowl, mix the buttermilk, egg, melted butter, vanilla extract, and vanilla bean paste (if using) until smooth.

      Pour the wet ingredients into the dry ingredients, and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

        Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or butter.

          Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

            Flip the pancakes and cook for another 1-2 minutes, or until golden brown.
