Ingredients
  

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (or almond milk)

1 large egg

2 tablespoons melted butter (or coconut oil)

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips (plus more for topping)

Optional toppings: whipped cream, fresh berries, syrup, or nuts

Instructions
 

In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, and salt until well combined.

    In another bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

        Gently fold in the chocolate chips, reserving some for topping if desired.

          Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.

            Once hot, pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for an additional 1-2 minutes or until the pancakes are cooked through and slightly firm to the touch.

              Repeat with the remaining batter, adjusting the heat if necessary to prevent burning.
