2 cups cooked chicken breast, diced

1 cup cherry tomatoes, halved

1 cup corn kernels (canned or frozen)

1 cup black beans, rinsed and drained

1 cup bell peppers (red and yellow), diced

1/2 cup red onions, finely chopped

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 tablespoon lime juice

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheddar cheese (optional)

1/2 cup tortilla strips or crushed tortilla chips (for topping)

Ranch or cilantro-lime dressing (for serving)

Instructions
 

In a large mixing bowl, combine the diced cooked chicken breast, halved cherry tomatoes, corn kernels, black beans, diced bell peppers, red onions, and diced avocado.

    In a small bowl, whisk together lime juice, cumin, chili powder, salt, and pepper to create a dressing. Pour the dressing over the salad mixture and toss gently to combine everything well.
