Ingredients

4 slices of whole-grain bread (or gluten-free bread)

1/2 cup tahini

1 tablespoon honey or maple syrup (for a vegan option)

1 tablespoon lemon juice

1 teaspoon ground cinnamon

1/4 teaspoon sea salt

1/2 cup fresh pomegranate seeds

1/4 cup toasted walnuts, chopped

Fresh mint leaves for garnish

Extra virgin olive oil (for drizzling)

Instructions

Toast the Bread: Begin by toasting the whole-grain bread slices until they are golden brown and crispy.

Prepare the Tahini Spread: In a mixing bowl, combine tahini, honey (or maple syrup), lemon juice, cinnamon, and sea salt. Whisk together until smooth. If the mixture is too thick, add a little water (1 teaspoon at a time) to achieve a spreadable consistency.

Assemble the Toasts: Spread a generous amount of the tahini mixture onto each toasted slice of bread.

Add Toppings: Sprinkle fresh pomegranate seeds and chopped walnuts on top of the tahini spread, ensuring even distribution.

Garnish: Add a few fresh mint leaves on top for a burst of color and freshness.

Drizzle: Finish with a light drizzle of extra virgin olive oil for added richness.

Serve: Cut the toasts in half or into quarters, and serve immediately as an appetizer or a snack.
