Taco Tater Tot Casserole

Ingredients
  

1 lb ground beef or turkey

1 packet taco seasoning

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes with green chilies (such as Rotel)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 bag (32 oz) frozen tater tots

1/2 cup sliced black olives (optional)

1/4 cup chopped fresh cilantro (for garnish)

1 cup sour cream (for serving)

Salt and pepper, to taste

Instructions
 

Preheat your oven to 425°F (220°C).

    In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat if necessary.

      Add the taco seasoning to the cooked meat, along with a splash of water (about 1/4 cup). Stir well to combine and simmer for 5 minutes. Season with salt and pepper to taste.

        In a large mixing bowl, combine the seasoned meat, black beans, corn, and diced tomatoes with green chilies. Mix until all the ingredients are well incorporated.

          In a greased 9x13 inch baking dish, spread the meat and veggie mixture evenly across the bottom.

            Sprinkle half of the cheddar and Monterey Jack cheese over the mixture.

              Evenly layer the frozen tater tots on top of the cheese layer.

                Bake in the preheated oven for 25 minutes, until the tater tots start to turn golden and crispy.

                  Remove the casserole from the oven and sprinkle the remaining cheese on top. If desired, add sliced black olives for extra flavor.

                    Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

                      Once cooked, let the casserole cool for a few minutes before garnishing with fresh cilantro.

                        Serve warm with dollops of sour cream on the side.
