Ingredients
  

1 lb ground beef (or turkey)

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 can (8 oz) tomato sauce

1 cup corn (frozen or fresh)

2 tablespoons taco seasoning (store-bought or homemade)

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 cup beef or vegetable broth

Fresh cilantro, chopped (for garnish)

Optional toppings: shredded cheese, sour cream, diced avocados, tortilla strips

Instructions
 

In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked; drain excess fat if necessary.

    Add the diced onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

      Incorporate the red bell pepper and cook for another 3-4 minutes until slightly tender.

        Stir in the black beans, kidney beans, diced tomatoes (with their juices), tomato sauce, corn, taco seasoning, cumin, smoked paprika, salt, and pepper. Mix well.

          Pour in the broth and bring the chili to a boil, then reduce the heat to low. Simmer uncovered for 30-40 minutes to allow the flavors to meld, stirring occasionally.

            Taste and adjust seasoning if necessary.

              Serve hot, garnished with fresh cilantro, and your choice of optional toppings like shredded cheese, sour cream, diced avocados, and tortilla strips.
