2 cups of fresh farmer's cheese or well-drained cottage cheese

1 large egg

1/4 cup granulated sugar (adjust to taste)

1 cup all-purpose flour (plus more for dusting)

1 tsp vanilla extract

1/4 tsp baking powder

Pinch of salt

Vegetable oil or butter for frying

In a mixing bowl, combine the cottage cheese, egg, sugar, vanilla extract, baking powder, and salt. Mix well until the mixture is smooth and all ingredients are combined.

    Gradually add the flour, starting with 3/4 cup, and mix until a soft dough forms. If the mixture feels sticky, incorporate more flour as needed. The dough should be moist but manageable.

      Once the dough is formed, turn it out onto a floured surface and knead lightly just until it comes together. Divide the dough into 8-10 equal portions.

        Shape each portion into a patty about 1/2 inch thick, making sure to coat each side with a bit of flour to prevent sticking.

          Heat a large skillet over medium heat and add a few tablespoons of vegetable oil or butter. Once hot, carefully add the syrniki, making sure not to overcrowd the pan.

            Cook for about 3-4 minutes on each side, or until they are golden brown and slightly crispy. Adjust the heat as necessary to avoid burning.

              Remove the cooked syrniki and place them on a paper towel-lined plate to absorb excess oil.
