Ingredients

1 medium sweet potato, cooked and cooled

1 medium apple, cored and chopped (Granny Smith or Honeycrisp recommended)

1 cup almond milk (or milk of choice)

1/2 cup plain Greek yogurt (or dairy-free yogurt)

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

A pinch of salt

1/2 cup ice cubes

Instructions

Cook the Sweet Potato: Start by baking or boiling the sweet potato until fork-tender. Allow it to cool completely, then peel and mash until smooth.

Prepare the Apple: While the sweet potato is cooling, core and chop the apple into small chunks.

Blend Ingredients: In a blender, add the mashed sweet potato, chopped apple, almond milk, Greek yogurt, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, salt, and ice cubes.

Blend Smoothly: Blend on high speed until all ingredients are well combined and the mixture is smooth and creamy. If the smoothie is too thick, you can add a little more almond milk to reach your desired consistency.

Taste and Adjust: Taste the smoothie and adjust sweetness or spices as needed. You can add more maple syrup for sweetness or cinnamon for a spicier flavor.

Serve: Pour the smoothie into glasses and enjoy immediately. For an extra touch, sprinkle a dash of cinnamon on top or garnish with apple slices.
