1 cup sugar

1/2 cup apple cider vinegar

1/4 cup water

2 tablespoons soy sauce

2 tablespoons fish sauce (or more for extra depth)

2-3 tablespoons fresh red chili peppers, finely chopped (adjust according to desired spiciness)

3 cloves garlic, minced

1 tablespoon cornstarch mixed with 1 tablespoon water (slurry)

1 teaspoon lime juice (optional)

Salt to taste

In a medium saucepan over medium heat, combine sugar, apple cider vinegar, and water. Stir well to combine and bring to a gentle boil.

    Once boiling, reduce the heat to low, and add soy sauce, fish sauce, finely chopped chili peppers, and minced garlic. Stir to mix all the ingredients thoroughly.

      Let the mixture simmer for about 8-10 minutes, allowing the flavors to meld together. Be careful not to let it boil too vigorously.

        Add the cornstarch slurry to the sauce, stirring continuously until the sauce thickens (about 2-3 minutes). If it's too thick, add a little more water to reach your desired consistency.

          Remove from heat and stir in the lime juice for an extra zing. Taste and adjust with salt if necessary.

            Allow the sauce to cool, then transfer it to a clean jar or bottle. It can be stored in the refrigerator for up to 2 weeks.
