Ingredients

For the Sweet and Spicy Honey Pepper Chicken:

1 lb chicken thighs, boneless and skinless

1/4 cup honey

2 tablespoons soy sauce

1 tablespoon apple cider vinegar

1 teaspoon minced garlic

1 teaspoon minced ginger

1 tablespoon crushed red pepper flakes (adjust for spice preference)

1 tablespoon vegetable oil

Salt and pepper to taste

Chopped green onions for garnish

For the Creamy Macaroni Cheese:

8 oz elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

2 cups shredded cheddar cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup breadcrumbs (optional, for topping)

Instructions

Prep the Chicken Marinade: In a bowl, combine honey, soy sauce, apple cider vinegar, minced garlic, minced ginger, crushed red pepper flakes, salt, and pepper. Mix well.

Marinate the Chicken: Add the chicken thighs to the marinade, ensuring they are well coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In the same pot, melt butter over medium heat. Stir in the flour and cook for 1-2 minutes, stirring constantly to make a roux. Gradually whisk in the milk, and continue to cook until the mixture thickens.

Add Cheese and Seasonings: Remove the pot from heat and stir in the shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until the cheese is fully melted and the sauce is creamy. Add the cooked macaroni to the cheese sauce and mix well.

Cook the Chicken: In a large skillet, heat vegetable oil over medium-high heat. Remove the chicken from the marinade, shaking off excess, and place it in the skillet. Cook for about 6-7 minutes per side or until the chicken is cooked through and caramelized, basting occasionally with any leftover marinade.

Optional Topping for Macaroni: If desired, transfer the creamy macaroni to a baking dish, sprinkle breadcrumbs on top, and place under the broiler for 2-3 minutes until golden brown and crispy.

Serve: Plate the Sweet and Spicy Honey Pepper Chicken alongside a generous serving of creamy macaroni cheese. Garnish with chopped green onions for a pop of color and flavor.
