Ingredients
  

1 pound (450g) chicken thighs (boneless, skinless)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 bell pepper, diced (any color)

1 small red onion, diced

2 cups diced tomatoes (fresh or canned)

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

½ cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the chicken thighs, black beans, corn, diced bell pepper, diced red onion, and diced tomatoes.

      Drizzle the olive oil over the mixture and sprinkle in the cumin, chili powder, garlic powder, salt, and black pepper. Toss everything together until well coated.

        Transfer the mixture to a large baking dish, spreading it out evenly.

          Cover the baking dish with aluminum foil and bake for 30 minutes.

            Remove the foil, sprinkle the shredded cheese on top, and return to the oven for an additional 10-15 minutes or until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the cheese is melted and bubbly.

              Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh cilantro before serving.
