Summer Corn Salad

Ingredients
  

4 ears of fresh sweet corn, husked

1 cup cherry tomatoes, halved

1/2 red bell pepper, diced

1/4 cup red onion, finely chopped

1 avocado, diced

1/4 cup feta cheese, crumbled

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper to taste

Instructions
 

Prepare the Corn: Bring a large pot of salted water to a boil. Add the corn and cook for 4-5 minutes until tender. Remove from water and let cool. Once cooled, carefully slice the kernels off the cob and set aside in a large mixing bowl.

    Add Fresh Produce: To the bowl with corn, add the cherry tomatoes, red bell pepper, red onion, avocado, feta cheese, and chopped cilantro.

      Make the Dressing: In a small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.

        Combine and Serve: Pour the dressing over the corn salad and gently toss to combine, taking care not to mash the avocado. Taste and adjust seasoning if needed.

          Chill (optional): For best flavor, let the salad sit for about 30 minutes in the refrigerator before serving.
