2 large red onions, thinly sliced

2 tablespoons sumac

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey or agave syrup

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a mixing bowl, combine the thinly sliced red onions and a pinch of salt. Let them sit for about 10 minutes to soften slightly and release some of their moisture.

    In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or agave syrup), sumac, and a dash of black pepper until well combined.

      Pour the dressing over the onions and use your hands or a spoon to gently massage the mixture into the onions, ensuring they are well coated.

        Let the onions marinate for at least 30 minutes at room temperature. This helps the flavors to meld beautifully.

          Once marinated, transfer them to a serving dish and garnish with fresh chopped parsley before serving.
