Ingredients

2 large red onions, thinly sliced

2 tablespoons olive oil

1 tablespoon sumac powder

1 teaspoon sea salt

1 tablespoon honey (or maple syrup for a vegan option)

2 tablespoons fresh lemon juice

Fresh parsley for garnish (optional)

Instructions

Prepare the Onions: Start by peeling and thinly slicing the red onions. You can use a mandoline slicer for uniform thickness if desired.

Marinate the Onions: In a medium-sized bowl, combine the sliced onions with olive oil, sumac, sea salt, and honey. Use your hands to toss the onions gently, ensuring that they are well coated in the mixture. This will help to soften the onions and infuse them with flavor.

Let Them Rest: Cover the bowl with plastic wrap and let the onions marinate at room temperature for at least 30 minutes. This allows the flavors to meld and the onions to become slightly tender.

Add Lemon Juice: After marinating, drizzle the fresh lemon juice over the onions. Toss again to combine, enhancing the brightness of flavors.

Serve: If desired, garnish with freshly chopped parsley before serving. These sumac onions can be served warm or chilled and make an excellent accompaniment to grilled meats, salads, or as a topping for wraps and sandwiches.
