200g sujuk (spicy Armenian sausage), thinly sliced

4 slices of fresh sourdough bread

100g mozzarella cheese, shredded

1 medium tomato, thinly sliced

1/2 red onion, thinly sliced

Handful of fresh arugula or spinach

1 tablespoon olive oil

1 teaspoon smoked paprika (optional)

Salt and pepper to taste

2 tablespoons of mayonnaise or mustard (optional)

Instructions
 

Prepare the Sujuk: In a skillet over medium heat, add the sliced sujuk. Cook for about 5-7 minutes, stirring occasionally until they are browned and crispy. Remove from heat and set aside.

    Toast the Bread: In the same skillet (or using a toaster), lightly toast the sourdough bread slices on both sides until golden brown.

      Layer the Ingredients: On one slice of toasted bread, spread a layer of mayonnaise or mustard if desired. Add a few slices of cooked sujuk, followed by a handful of shredded mozzarella, tomato slices, red onion, and arugula or spinach.

        Season: Sprinkle smoked paprika, salt, and pepper over the layered ingredients for an extra kick of flavor.

          Top and Grill: Place a second slice of toasted bread on top to form a sandwich. In the same skillet, add a splash of olive oil. Place the sandwich in the skillet and grill on both sides for about 2-3 minutes until the cheese melts and the bread is crispy.

            Serve: Remove the sandwich from the skillet, cut it in half, and serve immediately with extra tomato slices or a side salad if desired.
