8 oz spaghetti or fettuccine pasta

1 lb Italian sausage (sweet or spicy, sliced)

3 cloves garlic, minced

1/3 cup honey

1/4 cup soy sauce

1 tbsp fresh ginger, grated

1 tbsp olive oil

1 tbsp apple cider vinegar

1/4 tsp red pepper flakes (optional)

1 cup cherry tomatoes, halved

2 cups fresh spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced Italian sausage and cook until browned and cooked through, about 5-7 minutes. Use a slotted spoon to transfer the sausage to a plate and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant, then reduce the heat to low. Pour in the honey, soy sauce, apple cider vinegar, and red pepper flakes (if using). Stir to combine, letting the mixture simmer for 2-3 minutes until slightly thickened.

        Combine Ingredients: Return the sausage to the skillet, then add the halved cherry tomatoes and fresh spinach. Stir everything together and allow the spinach to wilt, about 1-2 minutes.

          Add Pasta: Add the cooked pasta to the skillet, tossing everything to combine. If the mixture seems dry, gradually add some reserved pasta water until desired consistency is reached.
