8 oz (225 g) penne pasta

1 lb (450 g) Italian sausage (sweet or spicy, casings removed)

3 tablespoons vegetable oil

4 cloves garlic, minced

1/4 cup honey

1/4 cup soy sauce

1 teaspoon red pepper flakes (adjust to taste)

1 bell pepper, sliced (red or yellow)

1 cup cherry tomatoes, halved

2 cups fresh spinach

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the penne pasta according to the package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, add the vegetable oil. Once hot, add the removed sausage casings. Cook, breaking up the sausage into bite-sized pieces, until browned and cooked through, about 5-7 minutes.

      Flavor Up the Sausage: Add the minced garlic and red pepper flakes to the skillet with the sausage and sauté for an additional 1-2 minutes until fragrant.

        Make the Sauce: In a small bowl, whisk together honey and soy sauce. Pour this mixture over the sausage in the skillet, stirring well to coat the sausage evenly. Let it simmer for about 3-4 minutes until it thickens slightly.
