Ingredients
  

1 lb ribeye steak, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 large eggs

1 cup shredded sharp cheddar cheese

1 cup sliced green onions

10 egg roll wrappers

1 cup vegetable oil (for frying)

Sweet chili sauce (for serving)

Instructions
 

Marinate the Steak: In a bowl, combine the sliced ribeye steak with olive oil, garlic powder, onion powder, salt, and pepper. Toss to coat evenly and let marinate for 15-20 minutes.

    Cook the Steak: In a skillet over medium-high heat, cook the marinated steak for about 3-4 minutes, or until browned and cooked to your preferred doneness. Remove from heat and let cool slightly.

      Scramble the Eggs: In another pan, scramble the eggs over medium heat until just set. Remove from heat and mix in the shredded cheddar cheese and sliced green onions until the cheese is melted and everything is well combined.

        Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the steak in the center and top with a generous spoonful of the egg and cheese mixture. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Brush a little water on the top corner to help seal it.

          Fry the Egg Rolls: In a large pot or deep skillet, heat the vegetable oil over medium-high heat until hot. Carefully place the egg rolls into the oil, cooking in batches if necessary, for 3-4 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

            Serve: Serve warm with sweet chili sauce for dipping.
