4 large flour tortillas

6 large eggs

1/2 cup milk

1 cup Italian sausage, cooked and crumbled

1/2 cup diced bell peppers (any color)

1/2 cup diced onions

1/2 teaspoon red pepper flakes (or to taste)

1 teaspoon Italian seasoning

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Olive oil spray or cooking spray

Optional: fresh basil or parsley for garnish

Instructions
 

Prepare Ingredients: In a medium bowl, whisk together the eggs and milk. Season with salt, pepper, and red pepper flakes. Set aside.

    Cook Vegetables: In a skillet over medium heat, add a drizzle of olive oil spray. Sauté the diced bell peppers and onions for about 3-4 minutes until they are soft. Set aside.

      Scramble Eggs: In the same skillet, pour in the egg mixture. Stir gently to scramble over medium-low heat until the eggs are just set (3-4 minutes). Remove from heat and fold in the cooked sausage, sautéed vegetables, Italian seasoning, mozzarella, and Parmesan cheese until well combined.

        Assemble Roll Ups: Lay one tortilla flat on a clean surface. Spoon a generous amount of the egg mixture along one edge of the tortilla. Roll it tightly away from you, tucking in the sides as you go to seal the filling inside. Repeat for the remaining tortillas.

          Cook Roll Ups: Preheat a non-stick skillet or griddle over medium heat and lightly spray with cooking spray. Place the roll ups seam-side down in the skillet. Cook for about 3-4 minutes on each side, or until golden brown and crispy.

            Serve: Remove from the skillet and let cool slightly. Slice each roll up in half and garnish with fresh basil or parsley if desired. Serve warm for a delicious breakfast on the go!
