Spicy Chicken Livers with Mushrooms

1 lb chicken livers, cleaned and trimmed

8 oz cremini mushrooms, sliced

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to your spice preference)

1 tablespoon soy sauce

1 tablespoon fresh lemon juice

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Ingredients: Rinse the chicken livers under cold water, trim any connective tissue, and pat them dry with a paper towel. Slice the cremini mushrooms and finely chop the onion and garlic.

    Cook the Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Sauté the Mushrooms: Add the sliced mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms are browned and have released most of their moisture, about 5-7 minutes.

        Add the Chicken Livers: Increase the heat to medium-high. Add the cleaned chicken livers to the skillet and season with smoked paprika, cayenne pepper, salt, and black pepper. Cook for about 3-4 minutes on each side, until the livers are browned on the outside but still slightly pink in the center.

          Flavor Boost: Drizzle the soy sauce and lemon juice over the cooked livers and mushrooms. Stir well to combine and let everything cook together for an additional 2-3 minutes.

            Finishing Touches: Remove the skillet from heat and add the butter, stirring until melted and incorporated. Taste and adjust seasoning if necessary.
