4 large eggs

2 medium-sized potatoes (Yukon Gold or Russet)

1 medium onion (optional)

1/4 cup olive oil

Salt, to taste

Pepper, to taste

Prepare the Potatoes: Peel the potatoes and slice them thinly (about 1/8 inch thick). If using onion, slice it thinly as well.

    Cook the Potatoes & Onion: In a large non-stick skillet, heat the olive oil over medium heat. Add the sliced potatoes and onion, and season with salt. Cook gently, stirring occasionally, until the potatoes are tender but not browned (about 15-20 minutes). Drain any excess oil if necessary, then remove from heat.

      Beat the Eggs: In a large bowl, crack the eggs and beat them until well combined. Season with salt and pepper.

        Combine Ingredients: Add the cooked potatoes (and onions, if used) to the beaten eggs, mixing gently to coat the potatoes without breaking them too much.

          Cook the Tortilla: In the same skillet, add a little more olive oil if needed, and heat over medium-high heat. Pour the potato-egg mixture into the skillet, spreading it evenly. Cook for about 5-7 minutes, or until the bottom is set and golden brown.

            Flip the Tortilla: To flip, place a large plate over the skillet. Carefully invert the skillet so the tortilla lands on the plate, then slide it back into the skillet to cook the other side. Cook for an additional 5-7 minutes until the other side is also golden brown.

              Serve: Once fully cooked, remove the tortilla from the skillet. Let it cool for a few minutes, then cut into wedges. Serve warm or at room temperature, garnished with fresh herbs if desired.
