400g spaghetti

2 large lemons (zest and juice)

1/3 cup extra virgin olive oil

3 garlic cloves, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Salt, to taste

Freshly ground black pepper, to taste

Instructions
 

Cook the spaghetti: In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

    Prepare the lemon sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for about 1-2 minutes, or until the garlic is fragrant and golden (be careful not to burn it).

      Add lemon: Mix in the lemon zest and juice into the skillet with the garlic. Stir well to combine and let the mixture simmer for about 1 minute to allow the flavors to meld.

        Combine spaghetti and sauce: Add the drained spaghetti directly into the skillet, tossing it gently in the lemon sauce. If the mixture seems dry, gradually add reserved pasta water, one tablespoon at a time, until desired consistency is achieved.

          Finish the dish: Stir in the grated Parmesan cheese, and season with salt and freshly ground black pepper to taste. Toss until the pasta is evenly coated with the sauce.

            Serve: Plate the Spaghetti Limone in shallow bowls, garnishing with fresh basil leaves and additional Parmesan if desired.
