1 cup unsalted butter, softened

2 cups granulated sugar

4 large eggs, at room temperature

2 teaspoons vanilla extract

1 teaspoon almond extract

3 cups all-purpose flour, sifted

1 teaspoon baking powder

1/2 teaspoon salt

1 cup buttermilk

1 cup pecans, chopped (plus extra for decorating)

1 tablespoon of maple syrup (optional for added flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease and flour a 10-inch bundt pan or two 9-inch loaf pans.

    Cream the Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until the mixture is light and fluffy, about 4-5 minutes.

      Add the Eggs and Extracts: Add the eggs one at a time, fully incorporating each egg before adding the next. Then mix in the vanilla and almond extracts.

        Combine Dry Ingredients: In a separate bowl, whisk together the sifted flour, baking powder, and salt.

          Mix in Dry and Wet Ingredients: Gradually add the dry ingredients to the butter mixture alternately with the buttermilk, starting and ending with the dry ingredients. Mix until just combined; be careful not to overmix. Fold in the chopped pecans and maple syrup if using.

            Pour the Batter: Pour the batter into the prepared bundt pan or loaf pans, smoothing the top with a spatula.

              Bake: Bake in the preheated oven for 60-75 minutes for the bundt pan (40-50 minutes for loaf pans), or until a toothpick inserted in the center comes out clean.

                Cool the Cake: Allow the cake to cool in the pan for about 15 minutes before inverting it onto a wire rack to cool completely.

                  Serve and Garnish: Once cooled, you can optionally drizzle the top with a glaze made from powdered sugar mixed with a little milk or decorate with additional chopped pecans.
