Southern Fried Salmon Patties

1 can (14.75 oz) of pink salmon, drained and flaked

1/2 cup cornmeal

1/2 cup breadcrumbs (preferably seasoned)

1/4 cup finely chopped onion

1/4 cup finely chopped bell pepper (any color)

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Oil for frying (vegetable or canola oil)

Lemon wedges (for serving)

Combine Ingredients: In a large mixing bowl, combine the flaked salmon, cornmeal, breadcrumbs, chopped onion, and chopped bell pepper. Mix well to distribute the ingredients evenly.

    Add Flavor: In a separate bowl, whisk together the eggs, Dijon mustard, Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper. Pour this mixture into the salmon mixture and stir until everything is well combined. The mixture should be moist but firm enough to hold its shape; adjust with a little more breadcrumbs if necessary.

      Form Patties: Using your hands, take portions of the mixture and form them into patties about 2-3 inches in diameter and 1/2 inch thick. Place them on a plate or a baking sheet lined with parchment paper.

        Heat Oil: In a large skillet, pour enough oil to cover the bottom of the pan and heat it over medium heat until shimmering.

          Fry Patties: Carefully place the patties in the hot oil, making sure not to overcrowd the skillet. Fry for about 4-5 minutes on each side or until golden brown and crispy. Flip them gently to avoid breaking.
