Ingredients
  

1 cup yellow cornmeal

1/2 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk

1 large egg

2 tablespoons melted butter (plus extra for frying)

Optional: Chopped green onions or jalapeños for added flavor

Instructions
 

Mix Dry Ingredients: In a medium mixing bowl, combine the yellow cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt. Whisk together until well blended.

    Combine Wet Ingredients: In another bowl, whisk together the buttermilk, egg, and melted butter until smooth.

      Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. If desired, fold in chopped green onions or jalapeños for an extra kick. The batter should be slightly lumpy; do not overmix.

        Heat the Pan: In a large skillet, heat a tablespoon of butter over medium heat until melted. You can also use a cast iron skillet for an even crispier finish.

          Cook Hoecakes: Drop about 1/4 cup of batter onto the skillet for each hoecake. Flatten slightly with the back of a spatula. Cook for 3-4 minutes until the edges appear set and small bubbles form on the surface. Flip and cook for another 3-4 minutes or until golden brown and cooked through.

            Repeat: Continue with the remaining batter, adding more butter to the skillet as needed.

              Serve: Serve hot, topped with butter and honey or syrup, or alongside fried chicken, greens, or your favorite Southern dish.
