8 slices of Texas toast (thick-cut white bread)

1 lb smoked brisket, shredded or chopped

1 cup sharp cheddar cheese, grated

1 cup pepper jack cheese, grated

½ cup BBQ sauce (preferably a tangy, southern-style)

4 tablespoons unsalted butter, softened

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

½ cup pickled jalapeños (optional, for a spicy kick)

Prepare the Bread: Begin by spreading softened butter on one side of each slice of Texas toast. In a small bowl, mix the garlic powder, onion powder, salt, and pepper. Sprinkle the mixture evenly over the buttered side of the bread.

    Assemble the Sandwich: On the unbuttered side of 4 slices, layer half of the shredded brisket, followed by ¼ cup each of sharp cheddar and pepper jack cheese. Drizzle 1 tablespoon of BBQ sauce over the cheese. If desired, add pickled jalapeños for added spice.

      Top and Repeat: Add another slice of Texas toast on top, buttered side up. Repeat the layering process with the remaining slices of bread, brisket, and cheese until you have two sandwiches assembled.
