Ingredients

1 cup active sourdough starter (fed and bubbly)

1/2 cup unsalted butter, softened

1 cup all-purpose flour (plus extra for dusting)

1/2 tsp sea salt

1/2 tsp garlic powder (optional)

1/4 tsp onion powder (optional)

Flaky sea salt for sprinkling on top

Instructions

Prepare Dough: In a mixing bowl, combine the active sourdough starter and softened butter. Mix until well incorporated, creamy, and smooth.

Add Dry Ingredients: Gradually add the all-purpose flour, sea salt, garlic powder, and onion powder (if using). Mix until a dough forms. The texture should be soft but not sticky. If it’s too sticky, add a little more flour, 1 tablespoon at a time.

Chill the Dough: Wrap the dough in plastic wrap and flatten it into a disk. Refrigerate for at least 1 hour, or overnight for better flavor.

Roll Out: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper. On a lightly floured surface, roll out the chilled dough to about 1/8 inch thickness.

Cut Crackers: Using a pizza cutter or a sharp knife, cut the dough into squares or rectangles. Transfer the cut crackers to the prepared baking sheet.

Sprinkle with Salt: Sprinkle flaky sea salt over the top of the crackers to season.

Bake: Bake in the preheated oven for 15-20 minutes, or until golden brown and crisp. Keep an eye on them to prevent burning, as they can brown quickly towards the end.

Cool and Store: Remove from the oven and let cool completely on a wire rack. Once cool, store in an airtight container at room temperature for up to a week.

Prep Time: 10 minutes | Total Time: 1 hour 40 minutes | Servings: About 20 crackers
