1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup molasses

1 large egg

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon salt

1/2 cup granulated sugar (for rolling)

Instructions
 

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy.

      Add the molasses and egg to the butter and sugar, mixing until fully combined.

        In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt.

          Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to over-mix the dough.

            Scoop out tablespoon-sized portions of dough and roll them into balls. Roll each ball in granulated sugar until fully coated.

              Place the sugar-coated balls on the prepared baking sheets, spaced about 2 inches apart.

                Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers remain soft.

                  Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
