Ingredients

4 oz smoked salmon

1 medium cucumber

1/2 cup hummus (store-bought or homemade)

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tsp lemon juice

Salt and pepper to taste

4 small whole wheat or spinach tortillas

Optional: capers for garnish

Instructions

Prepare the Cucumber: Thinly slice the cucumber lengthwise using a vegetable peeler or mandoline to create long strips. Aim for about 8-10 slices.

Mix Hummus: In a small bowl, combine the hummus, chopped dill, lemon juice, salt, and pepper. Mix well until incorporated.

Assemble the Tortillas: Lay a tortilla flat on a clean surface. Spread a generous layer of the hummus mixture over the entire surface of the tortilla.

Layer the Ingredients: On top of the hummus, lay out a few pieces of smoked salmon and place the cucumber strips evenly across the tortilla.

Roll It Up: Starting from one end, carefully roll the tortilla tightly but gently, ensuring all the fillings stay inside. Repeat the process with the remaining tortillas.

Slice and Serve: Using a sharp knife, slice the rolled tortillas into bite-sized pieces, about 1-2 inches thick. Arrange them on a serving platter. If desired, garnish with capers for an extra touch.

Enjoy: Serve the smoked salmon roll-ups chilled as a refreshing appetizer or a light meal.
