Ingredients

1 cup almond flour

1/4 cup unsweetened shredded coconut

1/4 cup brown sugar, packed

2 tablespoons granulated sugar

1/4 teaspoon salt

1/4 teaspoon baking soda

1/4 cup unsweetened cocoa powder

1/4 cup coconut oil, melted

1/4 teaspoon vanilla extract

1/4 cup dark chocolate chips

12 whole almonds (optional for topping)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a small baking sheet with parchment paper.

Mix Dry Ingredients: In a medium mixing bowl, combine almond flour, shredded coconut, brown sugar, granulated sugar, salt, baking soda, and cocoa powder. Stir until evenly mixed.

Add Wet Ingredients: Pour in the melted coconut oil and vanilla extract. Mix until the ingredients are well combined. The dough should be moist but crumbly.

Incorporate Chocolate Chips: Gently fold in the dark chocolate chips, distributing them evenly throughout the dough.

Form Cookies: Using a tablespoon, scoop out the dough and roll it into balls. Place the dough balls on the prepared baking sheet, leaving some space between each cookie. If desired, press a whole almond on top of each cookie for added texture and flavor.

Bake Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges are slightly firm and the tops are set. They may look soft but will firm up as they cool.

Cool Down: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: These cookies are best enjoyed fresh but can be stored in an airtight container for up to a week.
