1.5 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (10 oz) diced tomatoes with green chilies

1 cup chicken broth

1 packet taco seasoning

1 cup cream cheese, cubed

2 cups shredded cheddar cheese

1/2 cup chopped fresh cilantro (for garnish)

Corn or flour tortillas

Optional toppings: avocado slices, sour cream, lime wedges, jalapeños

Instructions
 

Prepare the Chicken: Place the chicken breasts at the bottom of the slow cooker.

    Add the Beans and Tomatoes: Pour the black beans and diced tomatoes with their juices over the chicken.

      Season: Sprinkle the taco seasoning evenly over the top, then pour in the chicken broth.

        Slow Cook: Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and shreds easily.

          Shred the Chicken: About 30 minutes before serving, remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker.

            Add Cream Cheese: Add the cubed cream cheese to the slow cooker. Stir gently to combine the cream cheese with the other ingredients as it melts.

              Cheesy Finish: Once the cream cheese has melted, stir in the shredded cheddar cheese until fully combined and creamy.

                Serve: Warm the tortillas in a dry skillet or microwave. Spoon the cheesy quesadilla chicken mixture onto each tortilla, top with fresh cilantro, and add any additional toppings you desire.
